Known in Italy as "Chinghiale", Wild Boar is the ultimate in 'free-range' pig. This surprisingly delicate meat is lean and tasty and rapidly growing in popularity here in Australia.
A splash of Australian Chardonnay and a pinch of white pepper gives a nice little flavour kick to complement the beautiful natural flavours of this sustainably harvested meat.
