Pork salami infused with Mezcal and Chipotle Chilli

We've doubled down on the flavours of Mexico with the sweet, smoky heat of this flavour infusion (and we're not going to apologise to anyone!)

The beauty of this salami comes as much from the Mezcal, the smokey cousin to tequila, as it does from the high-quality imported chipotle we use. The best chipotle comes from smoke-drying only the most fully vine-ripened 'red' jalapeno peppers.
