Cacciatore Fennel Mild
Made with just a hint of fennel to unify the flavours, this unmissable cacciatore is a real family favourite.
There's a great story behind the history of using fennel or "finocchio" in salami, it supposedly goes back to the middle-ages in Tuscany when a thief hid a stolen salami in a patch of fennel. Later, when he returned for the salami, the sweet fragrance of the fennel had infused the salami, and a legend was born. Our recipe is more Southern-Italian in style, with paprika and black pepper, but we think it's pretty amazing, and we thank the thief for his good fortune!

Cacciatore is a smaller, dry-cured salami with coarsely cut pork that's ideal for snacking on straight from the chopping board. Many customers consider this our signature product, and it's the closest to a 'home-style' salami you'll likely find anywhere.
